I have a 2005 Liberty Renegade 111,000 miles on a 3.7 V-6. Recently started using oil at about 1 Qt. every 1 thousand miles. No leaks and no real sign of it burning oil from exhaust. Anybody ever come across this issue. Replaced the PCV valve already.

Also just started that intermittently the car won't start. Cranks fine just wont fire over. After 4-5 times cranking the car starts and runs fine.

Any feedback would be good

I would say you may have a loose battery connection or maybe a bad spark plug or two, but another thing could be a bad ignition switch.

Do a compression test. If I'm guessing right, oil is leaking past the valves causing a hard start.

Try some marvel mystery oil.
