Although it is illegal to watch while driving and I don't recommend it, if you want to do this for car shows or something you should be able to take the wire that goes to the brake and ground it.
Take a look at some of the backup cameras available. They are weather resistant and some offer night mode as well. I have one in mine, but I actually use it for rear vision. You can wire it so it is always on.
Nothing really fits under the back seats, they drop down when you fold them. My navigation unit just barely fits. You may fit 8's under the fronts with a custom enclosure.
Just go nuts like I did with mine and get the cargo rack from All J's.

The 701 is nice, I have one in mine too, I can control it from my headunit so I dont have the extra display in the jeep, but I do have one in my civic. It's a great unit
