Another idea is to put some washers on your wheel studs to space them out 1.25" or whatever your spacer size will be. Just don't go driving anywhere like that. ;)
You won't need the spacers for 235/85R16 size. I have that size on my kj and do not use wheel spacers with the stock wheels. You will need to trim the fog light access area, air dam, and pound the pinch weld. You may want to try the tires before you buy since the crd frankenlift has less lift...

I just bought some skids for my kj. Mopar doesn't make skids for 02-03 anymore except for the fuel tank skid. You have to buy skids for the 05+ models. The holes don't line up (not sure about the front) but you can drill new ones in the skid plate like i did. Also if you have the money go...

Only tires with the snow flake symbol are snow/winter tires in Canada. M+S is an all season tire.

I notice this on my shop light if the light bulb is screwed in a little loose. Perhaps your headlight connections are loosely connected and need to be reseated. I've also seen this from something shorting out. Like once when i got water in the signal light cover. Happens every winter for me.
I'm not sure if reseting it will help. If the temp is wrong then it is probably the temp sensor located in front of the radiator. You could test this by placing a known good thermometer beside the sensor and seeing if it is off.
