Trying to picture in my head how to install a switch that I can flip the ABS/ESP on/off when I want to rather than just pulling the fuse...

I'm looking here for the electronics/wiring experts to chime in...

I appreciate it!

I've done this to tap into the fusebox for my wife's heated seats...

Get a spare fuse. Break the fuse so that you have both of the "legs" of the fuse intact.

Solder a wire to one, solder an inline fuse harness to the other. Connect the free ends to a switch.

Now the "legs" will plug right into the fuse box, you have it still fused via the inline harness, and you have a switch to break the current.

The one on the steering column just desensitizes it...if we're on the same page! :)
