I would recommend the "soft" EMU rears. Even those are significantly beefer than stock in every dimension: coil diameter, spring diameter, and overall height. It's like a factor of 1.5x. You'll get something like 2.25" lift with the soft ones.
Answer, yes. You CANNOT get 3" lift with just springs, it's not physically possible due to the length of the strut/shock. You will have to add spacers, etc. to get that lift. With a winch (steel wire?) and ARB, I would be surprised if you get a full 2" with the 790s.

I would suggest rancho shocks in lieu of the bilstein or emus. Cheap, work great, lifetime warranty, fit without issue. Contrary to this forum, the folks over on the other jeep forums love ranchos and I agree!

For stock (best option), try ebay. There are a few auto wreckers out there that list 4.10 gears out of 2.4KJ. BUT, make sure you get the VIN and check it for yourself - don't trust them without the VIN. Even then, physically check the r/p when you get it. Learned this the hard way.
If you're doing the rear control arms, I would highly recommend the adjustable ones with welded sway bar link. That way you can make some minor adjustments to toe. And that can affect the trust angle.
