3.7 engine reputation
Here is something I can tell you about these 3.7 engines, They DON'T like to be overheated. The valve seats in the valvetrain are known to dry out and crack, dropping a valve in the cylinder. engine tick - hot or cold -- exhaust?
a tic is usually a small exhaust leak at the head/manifold or hydraulic lifter(s) Given what you said I would assume exhaust leak first. OK, so I let it cool down and it had a HUUUGE burp!! It was showing a bit over filled prior and after the burp it took about 5+ cups of coolant to bring it to the cold fill line. Just to add to what has been said here. I understand that hearing us say "replace the thermostat with an original MOPAR!" makes most car guys groan, but it is actually a thing with these Liberty's. Believe it or not, the dang thermostat is a big cause of issues on these if it is not a MOPAR...- mduclow

Rough Idle/Bright Red Exhaust
I would agree, it looks like a bad catalytic converter. But, running extra hot like that with a rough idle usually means way lean or fat (rich), which a plugged catalytic would cause. I can't say for sure what speed the fan is actually running at, but with the hood closed and the car running it is noticeable enough in sound to easily tell it is running.
