The Liberty runs the AC when any climate function is being used - including the heater - even when the AC button isn't lit up. Nearly all vehicles - including the Liberty - run the AC pump (if equipped) when the defroster is in use.
Use Bar's transmission stop leak to top it off. No "fiction additive" like Lucas to mess up the pump. It may or may not work, but its better than running while its low.

Most likely the MOPAR water pump is made in China too. Somewhere on here I've seen posts of people that have found a replacement pump with a metal impellor instead of the cheap plastic impellor on the MOPAR.
Without opening the engine its hard to advise you. A cheap and dirty rebuild will probably run around $1500 - $1700. That's new rod bearings, new main bearings, re ring the old pistons, polish the crank, hone the cylinder walls, and a new water pump. Probably should throw in a new oil pump...

Given the spacing I doubt the amount of heat they would have used would have affected that seal. More likely filling it to the correct level revealed the leak.
