I have seen engines use some oil when switching to syn, but then the usage will taper off over time. I have no explanation for it, but have seen it happen.
You could try spraying the connectors with some electronics cleaner, but I'm guessing you will need a new sensor. Even if you replace the sensor, you should still clean the contacts, since you saw corrosion.
Like ltd02 said, you need to do some diagnosis. I would start with pressure testing the cooling system. It could be a head gasket, but I wouldn't jump to conclusions.
