245/75r16 with stock will be fine.
I have 235/85r16 mud terrain tires that i ran with no regear for a half year, and series of adjusting frontend height.
If you regear with 245/75r16, it will be so beast!!
235/85r16s with 4.10 gears.
I had these tires for 6 months before i had diff gears done. It was pia seeing rpm go up and down and felt too much loss in power.
245/75r16 or 31x10.50r15 with 4.10 are probably a lot better than how mine is.
To op, why not stick with stock? You wont have problem fitting that size. Less backspacing will cause more chance of rub. It doesn't look that good to have rims stick out a couple inches.
Looked a little bubbly and uneven. Tried sanding it and now it looks like s***.
But rly, i slacked off prepping it because front flares were the last one I did and I've spent 6 hrs just prepping the rest at that time. Its rly a screw up on my end i think.
Oh im supposed to slow down for speed bump. Last time i slowed down on bump was when i drove my sisters civic lol.
Anyway to the op, what size do you have now? At current height i recommend 245/75r16.
