Coolant colour doesn't mean much, different manufacturers use different colours.
I'd fix that leak before driving too much, if you run out of coolant you will warp the heads and the repair bill will be eye watering...

Needs a lot of steel welding back in to put the strength back in the shell, I wouldn't fancy riding round in that on or off road, crash it and it will fold up like a tin can, they aren't like the old ladder chassis Jeeps, the whole body is structural, the seat frames and belts need the box...
Looking at the corrosion around the underside of the Jeep that looks like only one of your problems! The rockers look like they are in need of attention too, they are a major part of the structural strength.

I'd guess that your blower resistor has burned out for the fan fault, it's in the ductwork behind the glovebox.
The electrical fault is probably a bad earth related to the cooling fan as that starting seems to upset everything.
Sorry I don't know of anything, the latch will twist and release if you open the tailgate but as I said earlier it's not kind to the mechanism so go gently, once it's open you can strip the plastic liner out and see what needs doing.
It's operated by a solenoid so it's going to need power. I guess you could modify it but it's probably not an easy job.
Don't be tempted to just pop the glass by just opening the gate without releasing the glass, it will pull the latch off the glass.
All dry, still look rough but with the pitting that's not a surprise, the bores are still slightly greasy so hopefully the overspray will scrape out easily enough.
