I have the (rear) wheels and rotors off ... if I turn the hub should it be completely smooth?

I've been chasing a noise all weekend :birgits_tiredcoffee

Maybe not completely smooth as you would think
still have the fluid circulating on the gears etc
but shouldn't feel rough
