These are from a 2005 Renegade without a tow group and without the offroad...
There is so much conflicting info out there on this. All I know is that my 2005 without the tow package has both the tranny and PS coolers. Very possible this has changed with the yearly models due to the many differing opinions.
Coolers
Every libby comes with a tranny and power-steering cooler as far as I know. The 2nd fan and the size of the shroud are the differences in the tow package.
They are shown in the parts catalog if you have one.

I'm pretty sure all of the hitches will require the tow hook removal. The major brand ones are all pretty much the same as far as using the 6 built-in bolt holes in the back. So I'd be shocked if any of them allow you to keep the rear tow hook.
Nope... The blue wire is the wire that connects to your brake controller. Since it's unused until you get a brake controller it's hidden. I think it's mainly because they like to install stuff regardless of whether any extras are purchased. It's cheaper for them to put the blue wire there...

The libby absolutely does not come with the pre-wired harness under the dash. Most pickups and various other brands do, but unfortunately for us the Libby doesn't. Would be nice if Jeep caught up with other mfg's on this item...
