I have a 2012 jeep, liberty latitude, four-door 4 x 4 with 18 inch rims I want to put a 2 1/2 inch lift level kit with 1 inch spacers. What is the biggest tire size I can put on without rubbing

Around 30.5 inches diameter overall regardless of rim size. Some will say you can fit 32’s but rubbing and lack of uptravel will become a problem. I would discourage you from using the wheel spacers or wide wheels because it accentuates rubbing issues (wider steering arc, tire hitting the flares). I am not a fan of hacking up the wheel wells to make big tires fit on a Liberty. Look up threads about pounding over the pinch weld - that works well and it can be completely invisible when done right.
